A Note from the Chef

Now that kids are headed back to school, it’s time for some Crock-pot meals to make life easier for your family.  I came across a fun website for amazing slow cooker meals and have already enjoyed trying several.  Here’s one that was both easy and delicious!  Serve with a green salad and a loaf of crusty French bread and you’ve got a satisfying meal that the whole family will love!  Give it a try and let me know what you think!

Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Oregano
  • 2 (24-ounce jars) Ragu Chunky Tomato, Garlic and Onion pasta sauce
  • 1 lb Penne pasta, cooked and drained
  • 3 cups shredded Mozzarella cheese
  • ¼ cup shredded Parmesan cheese

Instructions

Place chicken breasts in slow cooker.  Sprinkle on salt, pepper and oregano.  Add jars of pasta sauce.  Cook on high for 4 hours or on low for 6-8 hours, without opening the lid during the cooking time.

Shred chicken in sauce and add cooked pasta.  Stir to combine.  Sprinkle on mozzarella cheese and parmesan cheese.  Cover and cook an additional 15 minutes or until cheese is melted.
